One of my goals when developing recipes is to create delicious dinners that can be prepared in both regular and healthy form. This particular dish is one that will taste amazing both ways!
Ingredients:
12oz – Brown Rice Pasta, prepared according to package (healthier version: Jovial Gluten Free)
1 to 1 and ½ lb salmon, skinless
1 cup fresh basil
12 ounces package of white mushrooms, sliced
2 cloves garlic, crushed
8 oz package mozzarella cheese, shredded (or light)
3 oz package of sundried tomatoes
Olive oil
Kosher Salt & pepper to taste.
Instructions:
Preheat the oven to 400 degrees. Place salmon on a baking sheet lined with parchment paper.
Season with salt, pepper and drizzle with olive oil. Place in the oven at 400 for 15 minutes. Set aside and cool.
In a large saute pan over medium-high heat, add oil, and cook the onions for 2-3 minutes until soft. Then add garlic, saute for another 2 minutes. Throw in mushrooms and sun-dried tomatoes until soft. Reduce heat to medium-low then add in basil.
Fold the cooked pasta into the vegetables, flake the salmon, and add to the pasta dish along with the cheese. Mix until the cheese has melted fully. Add salt and pepper to taste.
Remove salmon from the oven, let cool for 5 minutes, chop into desired sizes, and add to the pan.
Reduce heat to low, add the 2 cups shredded cheese and stir until the cheese is melted.
Remove from heat, add mozzarella cheese and salt and pepper to taste.

Is there an issue with cooking fish and cheese together?
Eating them together cold – lox and cream cheese, is not an issue
as far as I know but cooking them together?

They are cooked here separately. But not sure if that makes a difference.

No cooking or baking fish and cheese. see Pischei Tesuvah Y”D Simen 87 from Rabeinu Bchaya. Chabad seems to go along with this.
